Scrambled Egg Muffins



  • 1/2 pound bulk pork sausage
  • 1/2 cup chopped onion
  • 1/4 cup chopped green bell pepper
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • 12 eggs
  • 1/2 cup shredded cheddar cheese


  1. Brown sausage and drain.
  2. In a bowl, beat the eggs. Add onions, bell pepper, salt, pepper and garlic powder. Mix well.
  3. Stir in sausage and cheese.
  4. Spoon by 1/3 cupsful into greased muffin tins.
  5. Bake at 350 degrees F for 20-25 minutes or until a knife inserted in the center comes out clean.
