Hawaiian Toast with Custard Sauce

Ingredients

Toast

  • 2 eggs
  • 1/2 cup milk
  • 1 tablespoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon butter, softened
  • 6 slices bread
  • 3/4 cup finely crushed corn flakes
  • 6 pineapple slices, drained
  • 2 oranges. peeled and sliced

Custard Sauce

  • 1/3 cup honey
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 2 cup milk
  • 3 eggs
  • 1 teaspoon grated orange rind

Instructions

Toast

  1. Combine first 5 ingredients in bowl, beating slightly.
  2. Spread butter over 10 x 15 x 1-inch baking dish. Dip bread into egg mixture; drain. Coat with crumbs. Place in buttered dish.
  3. Bake at 400 degrees F for 5 minutes; turn.
  4. Bake for 5 to 7 minutes or until crisp.
  5. Top each slice of toast with pineapple and orange slices and 1/2 cup Custard Sauce.

Custard Sauce

  1. Combine first 3 ingredients in bowl, blending well. Stir in milk, mixing well. Cook over low heat until smooth and thick, stirring constantly.
  2. Beat eggs and orange rind in small bowl. Stir a small amount of hot mixture into eggs. Add eggs to hot mixture, stirring constantly. Cook over low heat until thickened, stirring constantly.
