Cottage Cheese Pancakes

Ingredients

  • 1 cup cottage cheese
  • 4 eggs
  • 6 tablespoons all-purpose flour
  • 6 tablespoons melted butter
  • Pinch of salt

Instructions

  1. With the back of a spoon, run the cottage cheese through a small sieve.
  2. Beat the eggs and stir into cheese.
  3. Beat in the other ingredients.
  4. Drop by tablespoonsful onto a hot greased griddle.
  5. Serve with confectioners' sugar or strawberry jam.
