Edgewater Beach Hotel Pancakes

Brian Cunningham shared this recipe which was obtained from the Edgewater Beach Hotel in Chicago, Illinois by his Grandfather, Donald "Hammy" Cunningham.

Ingredients

• 4 eggs
• 1 quart (4 cups) buttermilk
• 1/4 cup melted butter
• 1 teaspoon baking soda
• 1 tablespoon granulated sugar
• 1 teaspoon salt
• 2 1/2 cups cake flour

Instructions

1. Mix dry ingredients. Add eggs, buttermilk and melted butter. Do not stir more than necessary. It destroys the leavening qualities. Let batter thicken from standing. Add enough buttermilk to get desired consistency. Use no other liquid and no grease on the griddle.
2. Make small cakes.
