Flaming Pancakes

These are great to serve to guests.

Ingredients

Pancakes

  • Your favorite pancake mix

Sauce

  • 1/2 pound butter
  • 1 cup orange marmalade
  • 1 cup cane syrup
  • 1/4 cup port wine

Instructions

  1. Use your favorite pancake mix. Make pancakes 6 inches in diameter and immediately after removing from the griddle, fold into halves and then into quarters. Set aside.
  2. Combine Sauce ingredients in a large pan over low heat. When the sauce is quite hot, dip pancakes into it, remove and place on a preheated platter.
  3. Pour enough hot brandy on the platter to cover the bottom and ignite with a match.
  4. Serve flaming.
