Fluffy Pancakes

Ingredients

  • 2 eggs
  • 2 cups buttermilk*
  • 1/4 cup vegetable oil
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Combine all dry ingredients in large bowl.
  2. In another bowl whisk together eggs and oil into milk.
  3. Add wet ingredients into dry ingredients and whisk together making sure not to over-whisk.
  4. Heat griddle to medium-high heat.
  5. Melt butter on griddle and batter on griddle let cook until batter gets bubbly flip over and cook on second side until both sides are golden brown repeat until all batter has been used.

Notes

* Homemade buttermilk: Mix 2 cups milk and 2 tablespoons white vinegar together in a measuring cup or bowl; let sit until thickened, about 5 minutes.
