Diner Style Hash Browns

Ingredients

  • 1 1/2 pounds Russet potatoes, washed, scrubbed, and diced into 1/2-inch cubes
  • 2 tablespoons vegetable oil or bacon drippings, divided
  • 1 medium white onion, diced
  • 2 tablespoons butter
  • 1/2 teaspoon garlic powder*
  • 1/2 teaspoon Cajun seasoning*
  • Salt and pepper, to taste

Instructions

  1. Add the potatoes to a pot, and cover with water. Generously salt the water. Bring the mixture to a boil and let the potatoes cook for 2 minutes. Drain the potatoes, and let rest for 5 minutes.
  2. Add 1 tablespoon oil or bacon drippings to a large cast iron skillet, and heat it over medium heat. When the oil is hot, stir in the onions. Cook until the onions are soft and translucent, about 5 minutes.
  3. Transfer the cooked onions to a separate plate, and return the skillet to the stove.
  4. Add the other tablespoon oil or bacon drippings and the butter to the skillet, again heating over medium heat. When the oil is hot, add the potatoes, tossing evenly to coat with the oil and butter.

* Or any other seasonings desired
