Cranberry Spice Cake
Ingredients
Cake
- 1/2 cup shortening
- 1 cup light brown sugar, packed
- 2 eggs
- 1 cup jellied cranberry sauce
- 1 cup chopped nuts
- 1 cup seedless raisins
- 2 3/4 cups sifted all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 3/4 cup buttermilk
Creamy Lemon Icing
- 2 1/3 cups sifted confectioners' sugar
- 1/4 teaspoon salt
- 1 lemon juice
- 1/4 cup granulated sugar
- 1/2 cup shortening
- 1 tablespoon grated lemon rind
Instructions
Cake
- Blend shortening, sugar and eggs. Stir in cranberry sauce, nuts and raisins.
- Add mixed dry ingredients alternately with milk.
- Place in greased 9-inch tube pan.
- Bake at 350 degrees F about one hour.
- Cool; remove from pan. Ice with Creamy Lemon Icing.
Creamy Lemon Icing
- Mix confectioners' sugar, salt and egg.
- Boil lemon juice and granulated sugar together for 1 minute. Add shortening and lemon rind.
- Beat all ingredients together until creamy.
