Cranberry Spice Cake

Ingredients

Cake

  • 1/2 cup shortening
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1 cup jellied cranberry sauce
  • 1 cup chopped nuts
  • 1 cup seedless raisins
  • 2 3/4 cups sifted flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3/4 cup buttermilk

Creamy Lemon Icing

  • 2 1/3 cups sifted confectioners' sugar
  • 1/4 teaspoon salt
  • 1 lemon juice
  • 1/4 cup granulated sugar
  • 1/2 cup shortening
  • 1 tablespoon grated lemon rind

Instructions

  1. Cake: Blend shortening, sugar and eggs. Stir in cranberry sauce, nuts and raisins.
  2. Add mixed dry ingredients alternately with milk.
  3. Place in greased 9-inch tube pan.
  4. Bake at 350 degrees F about one hour.
  5. Cool; remove from pan. Ice with Creamy Lemon Icing.
  6. Creamy Lemon Icing: Mix confectioners' sugar, salt and egg.
  7. Boil lemon juice and granulated sugar together for 1 minute. Add shortening and lemon rind.
  8. Beat all ingredients together until creamy.
