Cranberry Spice Cake

Ingredients

Cake

  • 1/2 cup shortening
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1 cup jellied cranberry sauce
  • 1 cup chopped nuts
  • 1 cup seedless raisins
  • 2 3/4 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 3/4 cup buttermilk

Creamy Lemon Icing

  • 2 1/3 cups sifted confectioners' sugar
  • 1/4 teaspoon salt
  • 1 lemon juice
  • 1/4 cup granulated sugar
  • 1/2 cup shortening
  • 1 tablespoon grated lemon rind

Instructions

Cake

  1. Blend shortening, sugar and eggs. Stir in cranberry sauce, nuts and raisins.
  2. Add mixed dry ingredients alternately with milk.
  3. Place in greased 9-inch tube pan.
  4. Bake at 350 degrees F about one hour.
  5. Cool; remove from pan. Ice with Creamy Lemon Icing.

Creamy Lemon Icing

  1. Mix confectioners' sugar, salt and egg.
  2. Boil lemon juice and granulated sugar together for 1 minute. Add shortening and lemon rind.
  3. Beat all ingredients together until creamy.
