Hawaiian Macadamia Nut Cake

Ingredients

  • 1/4 cup butter, softened
  • 3/4 cup light brown sugar
  • 2 eggs, beaten
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup Macadamia nuts, chopped
  • 1 cup shredded fresh pineapple with juice

Instructions

  1. Heat oven to 350 degrees F. Grease a springform pan.
  2. Cream butter and sugar in a mixing bowl, then beat in eggs.
  3. In a separate bowl, combine flour, baking powder, baking soda and salt. Set aside.
  4. Stir nuts into butter mixture.
  5. Stir half the flour mixture into the creamed mixture, then add the pineapple and stir well.
  6. Add remaining flour mixture and beat to smooth consistency.
  7. Turn batter into prepared pan, and bake for one hour.
