Orange-Date Loaf Cake
Ingredients
- 1 cup sour cream
- 2 eggs
- 1/2 cup soft butter
- 2 cups granulated sugar, divided
- Rind of 1 orange (colored portion only)
- 1 cup walnuts
- 1/2 cup pitted dates
- 2 cups sifted all-purpose flour
- 1 teaspoon soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Juice of 1 orange
Instructions
- Heat oven to 350 degrees F. Grease and lightly flour a 9 x 5 x 3-inch loaf pan.
- Put sour cream, eggs, butter and 1 1/2 cups sugar in blender container in order
listed; cover and run on high speed until smooth. Add orange rind, nuts, and dates; cover and run on high speed until all are chopped.
- Sift flour, soda, baking powder and salt together into a mixing bowl; add blended mixture and mix well.
Turn batter into prepared pan.
- Bake for 1 hour and 15 minutes or until cake tests done.
- Remove from oven and cool in pan on rack for 5 minutes.
- Mix orange juice and 1/2 cup sugar; pour over hot cake while still in pan.
- When cake is cool, turn out onto serving plate.
