Frozen Cheesecake

  • 1/2 pound dry cottage cheese
  • 3 ounces cream cheese
  • 1/2 cup granulated sugar
  • 2 eggs, separated
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup Graham crackers, crushed


  1. Cream cottage cheese and cream cheese together.
  2. Add sugar gradually and beat until creamy.
  3. Add egg yolks, one at a time, beating well after each addition.
  4. Beat egg whites until stiff.
  5. Whip cream and combine with egg whites. Add to first mixture, folding carefully.
  6. Add vanilla extract.
  7. Sprinkle half of Graham cracker crumbs in bottom of refrigerator tray.
  8. Add cheese mixture and top with remaining crumbs.
  9. Freeze.
