Kahlua Cheesecake

Ingredients

Crust

  • 1 1/4 cups Graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup cocoa
  • 1/3 cup butter, melted

Filling

  • 2 (8 ounce) packages cream cheese
  • 3/4 cup sugar
  • 1/2 cup cocoa
  • 2 eggs
  • 1/4 cup strong coffee
  • 1/4 cup Kahlua
  • 1 teaspoon vanilla extract
  • 8 ounces sour cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 6-8 chocolate curls

Instructions

  1. Combine crust ingredients; mix well. Press firmly into bottom of 9-inch spring-form pan.
  2. Bake at 325 degrees F for 5 minutes; cool.
  3. Beat cream cheese with mixer until fluffy.
  4. Add 3/4 cup sugar gradually, mixing well.
  5. Add 1/2 cup cocoa.
  6. Add eggs, one at a time.
  7. Stir in next 3 ingredients and pour mixture into pan on top of crust.
  8. Bake at 375 degrees F for 25 minutes (will be soft).
  9. Combine sour cream, sugar and vanilla extract; spread over top of cheesecake.
  10. Bake at 425 degrees F for 5-7 minutes.
  11. Cool to room temperature, and chill for 8 hours or overnight.
