Rice Pudding Cheesecake

Treat your guests with a creamy pumpkin cheesecake that's topped with caramel-rum sauce. It's not your ordinary cheesecake—and we're not just talking about the rice pudding aspect. (Hint: You're going to need some goat milk caramel!)

Rice Pudding Cheesecake

Yield: 16 servings

Ingredients

Crust

  • 40 vanilla wafers, finely crushed (about 1 1/3 cups)
  • 1/4 cup butter, melted
  • 2 tablespoons granulated sugar

Filling

  • 4 (8 ounce) packages Philadelphia Cream Cheese, softened*
  • 1 cup granulated sugar
  • 1 cup Breakstone's or Knudsen Sour Cream
  • 1 tablespoon ground Mexican cinnamon (canela)
  • 1 teaspoon vanilla extract
  • 4 eggs
  • 2 3/4 cups cooked long-grain white rice**
  • 1/3 cup cajeta (goat milk caramel)

Instructions

  1. Heat oven to 325 degrees F.

Crust

  1. Mix first 3 ingredients; press onto bottom of 9-inch springform pan.

Filling

  1. Beat cream cheese and 1 cup sugar in large bowl with mixer until blended.
  2. Add sour cream, cinnamon and vanilla extract; mix well.
  3. Add eggs, 1 at a time, beating on low speed after each just until blended.
  4. Stir in rice; pour over crust.
  5. Bake for 1 hour 10 minutes or until center is almost set. Run knife around rim of pan to loosen cake; cool before removing rim.
  6. Refrigerate cheesecake for 4 hours.
  7. Serve topped with cajeta.

Notes

* Substitute: Prepare using Philadelphia Neufchatel Cheese.

** Cooking Rice: You will need to cook 1 cup rice as directed on package to get the 2 3/4 cups rice needed to prepare this delicious cheesecake.
