Butterscotch Cupcakes



  • 2 eggs
  • 1 cup brown sugar
  • 1 tablespoon butter, melted
  • 1/2 cup flour
  • 1/3 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup chopped pecans


  1. Add brown sugar to melted butter.
  2. Sift dry ingredients together and add to sugar mixture.
  3. Stir in pecans.
  4. Fill well-greased muffin pan 2/3 full and place a pecan on top of each.
  5. Bake at 350 degrees F for 20 minutes.
