S`mores Cupcakes
Yield: about 24 cupcakes
Equipment
- Standard muffin pan
- White standard paper baking cups
Ingredients
- 1 (18.25 ounce) box chocolate cake mix* (no pudding in mix)
- 1 1/3 cups water
- 3 eggs
- 1/3 cup vegetable oil
- 1 cup miniature marshmallows
- 1 cup Graham crackers, broken into bite size pieces
Instructions
- Heat oven to 350 degrees F. Line muffin pan with baking cups.
- In large bowl, combine cake mix, water, eggs and oil; beat with electric mixer for 2 minutes.
- Spoon batter into baking cups filling halfway.
- Sprinkle about 3 marshmallows and 3 Graham cracker pieces in center.
- Cover with additional batter, filling baking cups 2/3 full.
- Bake for 18 to 20 minutes or until a wooden pick inserted in center comes out clean.
- Allow cupcakes to cool in pan on cooling rack for 5 to 8 minutes.
- Remove from pan; cool completely.
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
