S`mores Cupcakes

Equipment

  • Standard muffin pan
  • White standard paper baking cups

Ingredients

  • 1 (18.25 ounce) box chocolate cake mix* (no pudding in mix)
  • 1 1/3 cups water
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1 cup miniature marshmallows
  • 1 cup Graham crackers, broken into bite size pieces

Instructions

  1. Heat oven to 350 degrees F. Line muffin pan with baking cups.
  2. In large bowl, combine cake mix, water, eggs and oil; beat with electric mixer for 2 minutes.
  3. Spoon batter into baking cups filling halfway.
  4. Sprinkle about 3 marshmallows and 3 Graham cracker pieces in center.
  5. Cover with additional batter, filling baking cups 2/3 full.
  6. Bake for 18 to 20 minutes or until a wooden pick inserted in center comes out clean.
  7. Allow cupcakes to cool in pan on cooling rack for 5 to 8 minutes.
  8. Remove from pan; cool completely.

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
