Cool Whip Frosting

I don't care much for frosting, but this one is light and doesn't seem quite as sugary as most. It's wonderful on banana cake!

Yield: about 4 cups or enough for two 9 inch layers

Ingredients

  • 1 small box vanilla instant pudding mix
  • 1/4 cup confectioners' sugar
  • 1 cup cold milk
  • 1 (8 ounce) container Cool Whip

Instructions

  1. Combine pudding mix, sugar and milk in a small bowl. Beat slowly with a rotary beater or at lowest speed of an electric mixer until well blended, about one minute.
  2. Fold in whipped topping.
  3. Spread on cake at once.

Notes

Frosted cake should be refrigerated. For firmer frosting let pudding mixture stand 5 minutes before adding Cool Whip.
