Marshmallow Creme Frosting

Ingredients

  • 1/2 cup granulated sugar
  • 2 large egg whites
  • 1/4 cup Marshmallow Creme
  • 1 teaspoon clear vanilla extract

Instructions

  1. Heat water to simmering a small pot of water over medium heat.
  2. In a glass bowl, add the egg white and sugar and place the bowl over the simmering water. Whisk constantly until the sugar dissolves and mixture reaches 160 degrees F on a candy thermometer (about 5 minutes).
  3. Place the egg white mixture in a mixing bowl (or the bowl of a stand mixer with the paddle attachment) and beat on medium speed until stiff peaks form (about 5 minutes).
  4. Slowly add the Marshmallow Creme and vanilla extract and beat on high speed until the stiff peaks form again (about 3 minutes).
