Peppermint Frosting

  • 1 1/2 cups granulated sugar
  • 2 egg whites
  • 1 tablespoon light corn syrup
  • 1/4 cup plus 1 tablespoon water
  • 1/2 cup finely crushed peppermint candy


  1. Combine sugar, egg whites and corn syrup in the top of a double boiler.
  2. Add water and beat on low speed until just blended.
  3. Place over boiling water. Beat on high for 7 minutes until stiff peaks form.
  4. Remove from heat.
  5. Add crushed peppermint and beat 2 additional minutes, or until thick.

Yield: enough for one 8-inch 3-layer cake
