Carrot Fruitcake

Ingredients

  • 1 1/2 cups vegetable oil
  • 2 cups granulated sugar
  • 4 eggs
  • 3 cups all-purpose four
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 3 cups finely shredded carrots
  • 1 1/2 cups coarsely chopped nuts
  • 1 cup raisins
  • 1 cup chopped dates
  • 1 cup mixed candied fruit

Instructions

  1. In a mixing bowl, combine oil and sugar.
  2. Add eggs, one at a time, beating well after each addition.
  3. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the egg mixture. Beat until smooth.
  4. Stir in remaining ingredients.
  5. Pour into two greased and floured 9 x 5 inch loaf pans.
  6. Bake at 350 degrees F for 1 hour or until a wooden pick inserted near the center comes out clean.
  7. Cool in pans for 10 minutes; remove to a wire rack to cool completely.
