Apple Cinnamon Cake

Ingredients

  • 1 (18.25 ounce) box spice or yellow cake mix*
  • 1 (21 ounce) can apple or peach pie filling
  • 3 eggs
  • 3 teaspoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Heat oven to 350 degrees F.
  2. Blend together cake mix, apple or peach filling and eggs in large mixer bowl. Beat at medium speed for 2 minutes.
  3. Combine sugar and cinnamon.
  4. Spread half the batter in greased 13 x 9-inch pan; sprinkle with half the cinnamon sugar.
  5. Repeat with remaining batter and cinnamon sugar.
  6. Bake for 30 to 35 minutes, or until wooden pick inserted in center of cakes comes out clean.
  7. Let cool.

Notes

For high altitude, stir 1/3 cup flour into dry cake mix and add 1/3 cup water with eggs. Bake at 375 degrees F for 35 to 37 minutes or until wooden pick tests clean.

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
