Banana Butter Pecan Cake

Ingredients

  • 1/2 cup mashed banana
  • 1 (18.25 ounce) box yellow cake mix*
  • 1 small box instant butter-pecan pudding mix
  • 4 eggs
  • 1 cup water
  • 1/4 cup vegetable oil
  • 1/2 cup finely chopped nuts

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a 10-inch tube pan.
  2. Combine all ingredients in a large bowl. Beat at medium speed with mixer for 4 minutes. Pour into prepared pan.
  3. Bake for 50 minutes or until a wooden pick inserted in center comes out clean.
  4. Cool in pan for 15 minutes.
  5. Remove from pan and finish cooling on a rack.
  6. Sprinkle with confectioners' sugar or top with confectioners' sugar glaze and garnish with banana slices and pecan halves if desired.
  7. Confectioners' Sugar Glaze: Place 1 cup sifted confectioners' sugar in a small bowl. Add about 1 tablespoon hot milk gradually, blending well.
  8. Spread over top of cake and allow to run down sides.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
