Banana Pudding Bundt Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 (3 ounce) box instant banana pudding mix
  • 4 eggs
  • 1 cup water
  • 1/4 cup vegetable oil
  • 3/4 cup mashed banana

Glaze

  • 2 cups confectioners' sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, finely chopped

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a Bundt pan and set aside.

Cake

  1. In large bowl combine cake mix, pudding mix, eggs, water, vegetable oil and banana. Beat with electric mixer for 2 minutes.
  2. Pour into prepared Bundt pan. Bake for 50 to 55 minutes or until cake tests done.
  3. Cool cake on a wire rack for 15 minutes.
  4. Remove cake and continue to cool on rack.

Glaze

  1. Beat together confectioners' sugar, milk and vanilla extract in a bowl until smooth and of a drizzling consistency.
  2. When cake is cooled, drizzle icing over cake.
  3. Sprinkle chopped nuts over icing, if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
