Better than Ever Cake

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 can crushed pineapple
  • 1/3 cup granulated sugar
  • 1 small box instant vanilla pudding
  • Coconut
  • Chopped nuts
  • Maraschino cherries
  • Cool Whip

Instructions

  1. Prepare and bake the cake in a 13 x 9-inch baking dish as directed.
  2. Punch holes in the cake with a wooden spoon handle as soon as you remove it from the oven.
  3. Cook pineapple and sugar until thick.
  4. Cool and add to the top of the cake.
  5. Make the pudding as per package directions.
  6. Pour pudding on the top of the pineapple, then top with Cool Whip.
  7. Cover with coconut, nuts and cherries.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
