Caramel Fudge Cake
Ingredients
Cake
- 1 (18.25 ounce) box chocolate pudding recipe cake mix*
- 28 light caramels
- 1 (14 ounce) can sweetened condensed milk
- 1 tablespoon butter
Frosting
- 1/2 cup butter
- 2 (1 ounce) squares unsweetened chocolate, melted
- 3 tablespoons cream or milk
- 1 teaspoon vanilla extract
- 2 cups sifted confectioners' sugar
Instructions
- Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch pan.
Cake
- Prepare cake according to directions.
- Combine caramels, milk and butter in top of double boiler. Stir constantly until caramels are melted and let cool slightly.
- Spread 1/2 cake mix in pan. Bake for 10 minutes.
- Pour caramel mixture in thin stream over batter.
- Cover with remaining cake mix batter.
- Bake at 350 degrees F for 20 to 30 minutes.
- Cool.
- Prepare frosting.
Frosting
- Beat first 4 ingredients until creamy, gradually adding confectioners' sugar.
- Frost cake.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
