Caramel Fudge Cake

Ingredients

Cake

  • 1 (18.25 ounce) box chocolate pudding recipe cake mix*
  • 28 light caramels
  • 1 (14 ounce) can sweetened condensed milk
  • 1 tablespoon butter

Frosting

  • 1/2 cup butter
  • 2 (1 ounce) squares unsweetened chocolate, melted
  • 3 tablespoons cream or milk
  • 1 teaspoon vanilla extract
  • 2 cups sifted confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F. Grease and flour a 13 x 9-inch pan.

Cake

  1. Prepare cake according to directions.
  2. Combine caramels, milk and butter in top of double boiler. Stir constantly until caramels are melted and let cool slightly.
  3. Spread 1/2 cake mix in pan. Bake for 10 minutes.
  4. Pour caramel mixture in thin stream over batter.
  5. Cover with remaining cake mix batter.
  6. Bake at 350 degrees F for 20 to 30 minutes.
  7. Cool.
  8. Prepare frosting.

Frosting

  1. Beat first 4 ingredients until creamy, gradually adding confectioners' sugar.
  2. Frost cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
