Chocolate Cherry Cake

This is a very moist cake that requires no icing. It is also good made with white or yellow cake mix.

Ingredients

  • 1 (18.25 ounce) box chocolate cake mix*
  • 1 can cherry pie filling
  • 1 small box cherry gelatin
  • 1 (10 ounce) bag large marshmallows

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* a 13 x 9 inch pan.
  2. Mix cake mix according to directions on box. Take out enough batter for 6 cupcakes and bake eparately.
  3. Place marshmallows in bottom of pan.
  4. Spread batter evenly over marshmallows.
  5. In separate bowl, mix pie filling and dry gelatin. Spread evenly over cake.
  6. Bake for 50 minutes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
