Chocolate Covered Cherry Cake with
Chocolate Cream Cheese Frosting

Ingredients

Cake

  • 1 (18.25 ounce) box chocolate fudge cake mix*
  • 2 eggs
  • 1/3 cup milk
  • 1 (21 ounce) can cherry pie filling
  • 1 teaspoon almond extract
  • 1/2 cup chocolate chips

Chocolate Cream Cheese Frosting

  • 1 stick (1/2 cup) softened butter
  • 1 (8 ounce) package cream cheese-softened
  • 1 teaspoon vanilla extract
  • 6 tablespoons milk (add gradually so frosting remains thick)
  • 1/2 cup cocoa powder
  • 3 3/4 cups confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F. Spray bottom and sides of 9 x 13-inch pan with cooking spray.

Cake

  1. Beat cake mix, eggs, milk and almond extract for 1 minute.
  2. Beat in pie filling and chocolate chips for 1 more minute.
  3. Bake for 35 minutes or until tests done with a wooden pick.
  4. Remove from oven and cool completely on wire rack.
  5. Frost with Chocolate Cream Cheese Frosting.

Chocolate Cream Cheese Frosting

  1. Beat all ingredients together until light and fluffy.
  2. Frost cake.
  3. Garnish with chocolate covered cherries if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
