Chocolate Covered Cherry Cake with
Chocolate Cream Cheese Frosting
Ingredients
Cake
- 1 (18.25 ounce) box chocolate fudge cake mix*
- 2 eggs
- 1/3 cup milk
- 1 (21 ounce) can cherry pie filling
- 1 teaspoon almond extract
- 1/2 cup chocolate chips
Chocolate Cream Cheese Frosting
- 1 stick (1/2 cup) softened butter
- 1 (8 ounce) package cream cheese-softened
- 1 teaspoon vanilla extract
- 6 tablespoons milk (add gradually so frosting remains thick)
- 1/2 cup cocoa powder
- 3 3/4 cups confectioners' sugar
Instructions
- Heat oven to 350 degrees F. Spray bottom and sides of 9 x 13-inch pan with cooking spray.
Cake
- Beat cake mix, eggs, milk and almond extract for 1 minute.
- Beat in pie filling and chocolate chips for 1 more minute.
- Bake for 35 minutes or until tests done with a wooden pick.
- Remove from oven and cool completely on wire rack.
- Frost with Chocolate Cream Cheese Frosting.
Chocolate Cream Cheese Frosting
- Beat all ingredients together until light and fluffy.
- Frost cake.
- Garnish with chocolate covered cherries if desired.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
