Chocolate Covered Oreo Cookie Cake

Ingredients

Cake

  • 1 (18.25 ounce) box devil's food chocolate cake mix*

Glaze

  • 4 (1 ounce) squares Baker's Semi-Sweet Baking Chocolate
  • 1/4 cup butter, cut up (1/2 stick)

Filling

  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 cups thawed Cool Whip
  • 20 Oreo cookies, crushed

Instructions

Cake

  1. Follow package directions. Bake in two 9-inch cake pans at 350 degrees F.
  2. Cool in pans for 5 minutes.
  3. Invert onto wire rack and cool completely.

Glaze

  1. Melt chocolate in microwave. Stir in butter until well mixed. Set aside (uncovered) to slightly thicken (5 minutes).

Filling

  1. Beat cream cheese and sugar in large bowl until well mixed.
  2. Gently stir in Cool Whip and crushed Oreo cookies.
  3. Place one layer of cake, top side down, on cake platter. Spread filling all over.
  4. Set 2nd layer of cake onto filling gently, top side up. Spread melted chocolate all over top of cake only.
  5. Refrigerate.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
