Cinnamon Butter Cake

Ingredients

• 1 (18.25 ounce) box yellow pudding-in-the-mix cake mix*
• 4 eggs
• 1/2 cup (1 stick) butter
• 8 ounces cream cheese, softened
• 1 1/2 teaspoons vanilla extract
• 1 pound powdered sugar
• 1 to 2 teaspoons ground cinnamon

Instructions

1. Mix one of the eggs together with the butter and cake mix. This will make a dough. Press the mixture into the bottom of a greased 13 x 9 x 2-inch baking pan.
2. Beat the remaining eggs into the cream cheese until creamy.
3. Stir in the vanilla extract and cinnamon. Continue beating and slowly adding the powdered sugar until it is all combined. Pour this over the crust.
4. Bake at 350 degrees F for 30 to 35 minutes.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
