Easy Chocolate Banana Cake

Ingredients

  • 1 (18.25 ounce) box white or yellow cake mix*
  • 1/3 cup vegetable oil
  • 4 eggs
  • 8 ounces sour cream
  • 8 tablespoons unsweetened cocoa powder
  • 1/2 cup semisweet chocolate chips
  • 1 large ripe banana, mashed

Instructions

  1. Heat oven to 350 degrees F. Lightly grease and flour** a 13 x 9-inch pan.
  2. Mix together cake mix, oil, eggs, sour cream, cocoa, chocolate chips and banana. Beat for two minutes.
  3. Pour into prepared pan.
  4. Bake for 35 minutes.
  5. Let cool in pan, then dust with confectioners'' sugar, if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
