Easy Fresh Blueberry Cake

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 2/3 cup water
  • 1 egg
  • 1/4 cup butter (NO SUBSTITUTE), melted
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 1/2 cups fresh blueberries

Instructions

  1. Heat oven to 350 degrees F. Grease a 9-inch square baking pan.
  2. Measure 2 cups cake mix into a bowl.
  3. Prepare remaining mix according to package directions, using 2/3 cup water and 1 egg. Measure 1 cup batter; set aside.
  4. Pour remaining batter into prepared pan.
  5. Add butter, cinnamon and nutmeg to reserved cake mix. Mix until crumbly. Sprinkle half of the crumb mixture evenly over the batter in pan.
  6. Arrange blueberries evenly over crumb mixture.
  7. Spoon reserved batter evenly over top of blueberries.
  8. Sprinkle with remaining half of crumb mixture.
  9. Bake for 45 to 50 minutes or until done.
  10. Serve warm.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
