Elvis Gooey Butter Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 egg
  • 8 tablespoons (1 stick) butter, melted
  • Mint leaves, for garnish
  • Whipped cream, for garnish

Filling

  • 8 ounces cream cheese, softened
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup peanut butter
  • 1 whole banana
  • 8 tablespoons (1 stick) butter
  • 1 (16 ounce) box confectioners' sugar

Instructions

  1. Heat the oven to 350 degrees F.

Cake

  1. Combine the cake mix, egg, and butter together and mix well. Pat into a lightly greased 13 x 9-inch glass baking pan.
  2. Prepare the filling.

Filling

  1. Beat the cream cheese until smooth.
  2. Add the eggs and vanilla extract.
  3. Add the peanut butter; beat.
  4. Add the banana and butter and mix well.
  5. Add the confectioners' sugar and mix well. Spread over the cake mixture.
  6. Bake for 45 to 50 minutes. The center should be a little gooey, so do not over-bake.
  7. Top each cake slice with a mint leaf and dollop of whipped cream.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
