Fudge Ribbon Cake

A delicious chocolate cake with a ribbon layer made with ricotta cheese, then glazed with a fudgy frosting.

Fudge Ribbon Cake

Yield: 12 to 14 servings

Ingredients

Cake

  • 1 (18.25 ounce) box chocolate or devil's food cake mix*

Ribbon Layer

  • 1 cup (8 ounces) Wisconsin ricotta cheese
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 tablespoons milk
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract

Glaze

  • 1 (6 ounce) package semisweet chocolate chips
  • 1/4 cup (1/2 stick) butter
  • 2 tablespoons light corn syrup

Instructions

  1. Butter and flour 12-cup Bundt pan or bottom of 13 x 9 inch baking pan.

Cake

  1. Combine cake ingredients and mix, following directions on cake mix box.

Ribbon Layer

  1. In small bowl, combine ribbon layer ingredients; beat until smooth and creamy.
  2. Spread half of cake batter in prepared baking pan.
  3. Spoon and spread ribbon mixture evenly over cake batter.
  4. Spoon and spread remaining batter evenly over ribbon mixture.
  5. Bake according to cake package directions.
  6. Cool completely and remove from pan, following package directions.

Glaze

  1. Combine glaze ingredients and heat over low heat, stirring constantly, until chocolate is melted; cool slightly. Spread over top of cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
