Fuzzy Navel Cake

Ingredients

Cake

  • 4 large eggs
  • 1/2 cup vegetable oil
  • 6 ounces orange juice
  • 4 ounces peach Schnapps
  • 1 (18.25 ounce) box yellow cake mix*
  • 1 (3 1/4 ounce) box instant vanilla pudding

Glaze

  • 1/3 cup peach Schnapps
  • 3 tablespoons soft butter
  • 2 teaspoons orange extract
  • 3 cups confectioners' sugar

Instructions

Cake

  1. Beat eggs until very foamy.
  2. Beat in oil, juice and Schnapps. Mix thoroughly.
  3. Add dry cake mix, a little at a time.
  4. Add dry instant pudding. Beat 3 minutes longer.
  5. Pour into greased 12-cup Bundt pan.
  6. Bake at 350 degrees F for 50 minutes.
  7. Cool upright in pan for 30 minutes.

Glaze

  1. Put all ingredients into bowl as listed: peach Schnapps, butter, orange extract and confectioners' sugar. Beat with electric mixer on high speed until smooth. Drizzle over cooled cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
