Inside-Out Chocolate Cake

Frosting is not needed; serve with ice cream or whipped cream, if desired.

Ingredients

  • 1 small box instant chocolate pudding
  • 1 (18.25 ounce) box chocolate cake mix*
  • 1 (12 ounce) bag semisweet chocolate chips
  • 1 3/4 cups milk
  • 2 eggs
  • 1 cup chopped pecans
  • Vanilla ice cream or whipped cream

Instructions

  1. Combine all the ingredients except pecans and vanilla ice cream (or whipped cream) in a large mixing bowl, stirring by hand until well-blended (about 2 minutes).
  2. Fold in pecans and pour batter into a greased Bundt pan.
  3. Bake at 350 degrees F for 50 to 55 minutes, or until cake springs back when lightly pressed with finger.
  4. Cool in pan for 30 minutes, then remove.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
