Key Lime Cake
Ingredients
Cake
- 1 (18.25 ounce) box Lemon Supreme cake mix*
- 1 small box lemon instant pudding
- 4 eggs
- 1/2 cup water
- 1/2 cup Key lime juice
- 1/2 cup vegetable oil
Drizzle
- 2 cups sifted confectioners' sugar
- 1/4 cup Key lime juice
Instructions
- Combine first 6 ingredients; beat for 2 minutes at medium speed of an electric mixer.
- Pour batter into a greased and floured** 13 x 9-inch pan.
- Bake at 350 degrees F for 35 minutes or until a wooden pick inserted in center comes out clean.
- Let cake cool in pan on a wire rack.
- Combine confectioners' sugar and 1/4 cup Key lime juice; drizzle over cake.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
