Lemon Bran Cake


  • 4 eggs
  • 1 cup water
  • 1/2 cup vegetable oil
  • 1 (18.25 ounce) box lemon cake mix
  • 1 small box instant lemon pudding
  • 1/3 cup flour
  • 1 cup whole bran cereal


  1. In a bowl beat eggs until foamy.
  2. Beat in water and oil
  3. Add cake mix, pudding mix and flour. Beat at medium speed for 2 minutes.
  4. Stir in cereal.
  5. Divide batter between two greased 9 x 5-inch loaf pans.
  6. Bake at 350 degrees F for 40 minutes or until a wooden pick inserted in center comes out clean.
  7. Remove to racks to cool.
  8. Sprinkle with confectioners' sugar.
