Mango Dream Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1/2 cup vegetable oil
  • 4 eggs
  • 1 cup ripe mango puree
  • 1/2 cup water

Topping

  • 1 (8 ounce) container Cool Whip
  • 1/3 cup milk
  • 1 (3 1/2 ounce) box instant vanilla pudding
  • 1 cup ripe mango puree

Instructions

Cake

  1. Combine all the cake ingredients and pour into a 9 x 13-inch pan.
  2. Bake at 350 degrees F for about 30 minutes until the cake is done.

Topping

  1. Combine all the ingredients and set in refrigerator until the cake is cooled. Do not remove the cake from the pan.
  2. Pour topping on cooled cake and return to refrigerator for 1 hour before serving for best results.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
