Mayonnaise Chocolate Cake

Ingredients

  • 1 (18.25 ounce) chocolate cake (with pudding in the mix)*
  • 1 cup Hellmann's mayonnaise
  • 1 cup water
  • 3 large eggs

Instructions

  1. Heat oven to 350 degrees F. Grease and flour* 2 layer cake pans.
  2. Combine chocolate cake mix, mayonnaise, water and eggs until blended. Beat according to package directions.
  3. Bake in prepared pans for 30 to 35 minutes.
  4. Frost as desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

This also works in the microwave. Microwave for 7 to 7 1/2 minutes in two glass cake pans. However, microwave ovens vary. Check to see when top springs back.
