Mountain Dew Cake

Ingredients

Cake

• 1 (18.25 ounce) box orange supreme cake mix*
• 1 small box coconut cream pudding and pie filling (not instant)
• 3/4 cup vegetable oil
• 1 bottle Mountain Dew
• 4 eggs

Icing

• 1 1/2 cups granulated sugar
• 4 tablespoons all-purpose flour
• 1/2 cup (1 stick) butter
• 1 large can crushed pineapple
• 1 cup coconut

Instructions

Cake

1. Mix all ingredients and bake in a 13 x 9-inch pan at 350 degrees F for 30 to 40 minutes. You may also bake in three layers, if desired.

Icing

1. Cook sugar, flour, butter and pineapple until thick.
2. Add coconut when icing is cooled, then spread on cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
