Ingredients

  • 1 (18.25 ounce) box white cake mix*
  • Grated rind and juice of 2 medium size oranges
  • Grated rind and juice of 2 medium size lemons
  • Granulated sugar (enough to make a thick glaze)

Instructions

  1. Heat oven to 350 degrees F.
  2. Prepare cake mix as directed on box.
  3. Fill miniature greased and floured* muffin tins 2/3 full.
  4. Bake for 10 to 12 minutes.
  5. Turn out onto paper towels.
  6. Make glaze of sugar, orange and lemon rind and juices.
  7. Dip tops of tiny cakes and return to paper towels while they are still slightly warm. Allow them to cool.
  8. Store in closed container in freezer and use as needed.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
