Orange Pineapple Dream Cake
Ingredients
Cake
- 1 (18.25 ounce) box yellow butter cake mix*
- 4 eggs
- 1/2 cup orange juice
- 1 teaspoon vanilla extract
- 1/2 cup (1 stick) soft butter
- 1 (11 ounce) can mandarin oranges, drained
Dream Cake Icing
- 1 large container Cool Whip
- 1/2 cup confectioners' sugar
- 1 small box vanilla instant pudding
- 1 (20 ounce) can crushed pineapple, drained
- 1 teaspoon vanilla extract
Instructions
Cake
- Add orange juice, butter and vanilla extract to cake mix.
- Add eggs, one at a time. Beat for 4 minutes.
- Add oranges and beat until broken into small pieces.
- Bake in 3 (8-inch) pans for 25 minutes at 350 degrees F.
Dream Cake Icing
- Mix pineapple and pudding and mix well.
- Add confectioners' sugar and vanilla extract and mix.
- Fold in Cool Whip.
- Spread in between layers and on top of cake.
- Store in the refrigerator.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
