Orange Pumpkin Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 3 egg whites
  • 1 1/4 cups canned plain pumpkin
  • 1 cup orange juice
  • 1/3 cup sour cream
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice

Glaze

  • 1 1/2 cups confectioners' sugar
  • 1/4 teaspoon vanilla extract

Instructions

  1. Heat oven to 350 degrees F.

Cake

  1. Mix together all the cake ingredients for 2 to 3 minutes.
  2. Pour into a greased Bundt pan. Bake for 35 to 40 minutes.
  3. Let cool.

Glaze

  1. Mix confectioners' sugar and vanilla extract.
  2. Gradually add water, a tablespoon at a time, until it reaches desired consistency and drizzle over cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
