Pastel Pound Cake

Ingredients

  • 1 (18.25 ounce) box white or yellow cake mix*
  • 1 small Jell-O Gelatin (any fruit flavor)
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 4 eggs, unbeaten

Instructions

  1. Empty cake mix into large bowl. Add remaining ingredients. Beat for 3 minutes, or until smooth and creamy.
  2. Pour batter into 10-inch tube pan that is lined on bottom with paper.
  3. Bake in moderate oven (350 degrees F) for 50 to 55 minutes.
  4. Cool in pan for 15 minutes.
  5. Remove from pan and cool on cake rack.
  6. Sprinkle with confectioners' sugar, if desired.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

This cake may also be baked in the following paper-lined pans: two 9 x 5 x 3-inch loaf pans for 40 to 45 minutes; one 13 x 9 x 2-inch pan for 40 to 45 minutes; two 9-inch layer pans for 30 to 35 minutes; two 8-inch layer pans for 35 to 40 minutes; or one 9-inch tube pan for 60 to 65 minutes.
