Pecan Coffee Cake
Ingredients
Cake
- 1 (18.25 ounce) box yellow cake mix*
- 1 cup + 2 tablespoons milk
- 1/4 cup vegetable oil
- 3 eggs
- 1 teaspoon maple or vanilla extract
Filling
- 1/3 cup packed brown sugar
- 1/3 cup chopped, toasted pecans
- 1 teaspoon ground cinnamon
Instructions
- Heat oven to 350 degrees F. Grease and flour a tube or 12 cup Bundt cake pan.
Cake
- Mix cake ingredients in a large bowl. Pour half of the batter into the prepared cake pan.
Filling
- Mix ingredients. Sprinkle half on top of batter in pan.
- Add remaining batter to pan and top with filling.
- Bake for 45 to 50 minutes.
- Cool for 30 minutes on wire rack.
- Remove cake from pan and serve warm.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
