Ingredients

  • 1 (18.25 ounce) box dark chocolate cake mix*
  • 1 cup milk
  • 1 cup granulated sugar
  • 24 large marshmallows
  • 14 ounces coconut
  • 1 1/2 cups granulated sugar
  • 1/2 cup evaporated milk
  • 1/2 cup butter

Instructions

  1. Bake a deep chocolate cake mix in a 15 x 10-inch jellyroll pan.
  2. While cake is baking, mix together milk, the 1 cup granulated sugar and marshmallows. Heat until marshmallows are melted.
  3. Remove from heat and add coconut.
  4. Spread mixture on slightly warm cake.
  5. Cook the 1 1/2 cups granulated sugar, evaporated milk and butter until boiling.
  6. Remove from heat and add 1 1/2 cup chocolate chips. Stir until chips are melted.
  7. Spread on cake.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
