Plum Cake

Ingredients

  • 1 (18.25 ounce) box yellow or white cake mix*
  • 1 cup sour cream
  • 2 (4 ounce) jars plum baby food
  • 1/3 cup vegetable oil
  • 1/4 cup granulated sugar
  • 4 eggs
  • 1 teaspoon cinnamon (or ground cardamom)
  • 2 tablespoons red food color

Instructions

  1. Heat oven to 350 degrees F. Mist a 12-cup Bundt pan with vegetable oil spray, then dust with plain flour** and shake out excess.
  2. Put cake mix, sour cream, plum baby food, oil, sugar, eggs and spices in large mixing bowl. Blend on low speed until fully mixed, then beat on medium speed for 2 to 3 minutes more, until batter is well-mixed and thick.
  3. Pour batter into prepared pan and place in oven.
  4. Bake for 40 to 45 minutes or until golden brown and pulling away from sides of pan.
  5. Remove from oven; cool on rack for 20 minutes until cool.
  6. Sprinkle with confectioners' sugar or use a vanilla glaze.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
