Poppy Seed Cake

Ingredients

Cake

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 tablespoon almond extract
  • 1/2 cup vegetable oil
  • 1 small box instant vanilla pudding
  • 4 eggs
  • 4 tablespoons poppy seeds
  • 1 cup hot water

Lemon Sauce

  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1 egg, beaten
  • Juice of 1 lemon
  • Grated rind of 1 lemon

Instructions

  1. Grease a Bundt pan. Heat the oven to 350 degrees F.

Cake

  1. Beat cake mix, almond extract, vegetable oil, dry pudding and 4 eggs for 3 minutes.
  2. Add poppy seeds and water. Beat for 1 more minute.
  3. Bake for 35 to 45 minutes.
  4. Serve with Lemon Sauce.

Lemon Sauce

  1. Mix all ingredients in a saucepan and cook, stirring, just until the sauce comes to a boil.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
