Pumpkin Pound Cake
Ingredients
- 1 (18.25 ounce) box yellow cake mix*
- 1 cup pumpkin
- 1/2 cup vegetable oil
- 1/2 cup water
- 3/4 cup granulated sugar
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 4 eggs
- 1/2 cup chopped pecans (optional)
Instructions
- Heat oven to 350 degrees F.
- Mix cake mix, pumpkin, oil, water, sugar, nutmeg, cinnamon, and eggs together until well blended.
- Fold in pecans, if desired.
- Pour into a tube or Bundt pan.
- Bake for 1 hour or until a wooden pick inserted into the center comes out clean.
- Dust cake with sifted confectioners' sugar or use your favorite vanilla or cream cheese frosting, melted and poured on top.
Notes
* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
