Rainbow Cake

Ingredients

  • 1 (18.25 ounce) box yellow cake mix*
  • 1 cup sour cream
  • 1/4 cup water
  • 2 eggs
  • 1 small box raspberry-flavor gelatin
  • Confectioners' sugar

Instructions

  1. Heat oven to 350 degrees F. Grease well and flour** a 10-inch Bundt pan.
  2. Combine cake mix, sour cream, water and eggs. Blend, then beat at medium speed for 2 minutes until creamy.
  3. Spoon 1/3 of batter into prepared Bundt pan.
  4. Sprinkle with half of the gelatin.
  5. Repeat layers.
  6. Spread remaining batter over gelatin to cover.
  7. Bake for 45 to 50 minutes or until cake springs back when lightly pressed.
  8. Cool in pan for 5 minutes.
  9. Remove from pan and cool on rack.
  10. Sprinkle with confectioners' sugar.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.
