Reese's Peanut Butter Cup Cake

This is a real treat for peanut butter lovers and tastes just like a Reese's cup!

Ingredients

  • 1 (18.25 ounce) box chocolate cake mix*
  • 2 pounds sifted confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 3 tablespoons Crisco or lard
  • 1/2 cup peanut butter
  • 6 Reese's Peanut Butter Cups, chopped into chunks

Instructions

  1. Heat oven to directions on box.
  2. Prepare cake as directed for a layer cake.
  3. Cool completely.
  4. Beat sugar, vanilla extract, Crisco, milk and peanut butter until it reaches desired consistency.
  5. Split layers and frost cake sprinkling with chopped candy.

Notes

* 18.25 ounce boxes of cake mix have been replaced by 16.5 ounce and 15.25 ounce boxes. To compensate for the volume loss in a 16 ounce box, whisk 6 tablespoons all-purpose flour into the dry cake mix before proceeding with the recipe. To compensate for the volume loss in a 15.25 ounce box, add 1/2 cup + 3 tablespoons all-purpose flour and 1/4 teaspoon baking powder.

The frosting consistency depends on personal taste. You can add more milk and peanut butter if you like to thin it out.
